Chocolate Pistachio Muffins

Serves 4 #STARFineFoods Ingredients: 1.5 oz butter 3.5 oz brown sugar 3.5 oz unsalted pistachios 5.3 oz hazelnut milk 9 oz all-purpose flour 3.5 oz thick dark chocolate bar broken into squares 2 medium eggs Instructions:

Melt the butter in the microwave and mix with the sugar and eggs to make a smooth paste.  

In a separate bowl, add the hazelnut milk to 1.5 oz crushed pistachios and stir well. Combine the contents of the two bowls and beat until the mixture is smooth. 

Add the sifted flour and mix just enough to blend the ingredients together without incorporating too much air. 

Spoon the batter into the muffin tins, filling halfway. Add two squares of chocolate to each muffin cup and then fill to ¾ (to leave enough room for the muffins to rise). 

Preheat the oven to 356F and then bake for 20 to 25 minutes.
