In a deep frying pan with a drizzle of STAR Canola Blend Cooking Oil, cook the diced chicken breasts until golden brown. Season with salt and pepper and set aside.

In the same pan, add a little more STAR Canola Blend Cooking Oil and, once hot, cook the chopped garlic and mushrooms over medium heat.

Pour in the chicken broth, turn up the heat and allow the liquid to reduce slightly. Add the cream, turn down the heat and cook for a few minutes until the sauce reduces and thickens.

Add the chicken breasts to the sauce and cook everything together for a few more minutes.
