The Best Gazpacho

Serves 4 #STARFineFoods Ingredients: 19 very ripe tomatoes 1 onion 1 green pepper 1 red pepper 1 cucumber 1 clove of garlic 1 cup of white bread (crusts cut off) Juice from half a lemon 2 teaspoons STAR red wine vinegar ½ cup STAR Extra Virgin Olive oil ½ cup cup water A pinch of salt Croutons Instructions:

Chop the tomatoes, the onion, the green pepper, the red pepper, the cucumber, the garlic and the bread. Add the lemon juice, vinegar, the extra-virgin olive oil and the water (add more or less water depending on how thick you like your gazpacho).

Let the mixture sit in the fridge for at least a couple of hours so that the flavors meld together (it’s best to let it rest overnight if possible).

Add salt to taste, blend the ingredients together until creamy and serve very cold, topped with croutons.
