First, make the pancakes: in a bowl, combine all the dry ingredients. Then add the milk, the egg and the
extra virgin olive oil. Stir until the batter is uniform. Set it aside to rest.

Prepare the syrup: In a saucepan, melt the butter over low heat. Then add the apple, sugar and cinnamon. When the mixture begins to brown, add the honey and cook for a couple of minutes, stirring often.

Drizzle a little
extra virgin olive oil in a pan and heat it. Pour in small amounts of the pancake batter and immediately turn down the heat. Let the pancakes cook on one side and flip to cook the other side. Serve topped with the apple cinnamon syrup.
