Zucchini Fritters

Ingredients
1 large zucchini
1 potato
2 cloves of garlic
1 egg
A pinch of fresh parsley
0.5 cup flour
Salt and pepper
A splash of STAR Organic extra virgin olive oil
Instructions
1.
Finely chop the zucchini and potato in the food processor along with the two cloves of garlic (alternatively, you can grate them by hand).
2.
Beat the egg and add it to the vegetables. Add the parsley and flour and stir well until the mixture is uniform.
3.
Form the mixture into round fritters, approximately one centimeter thick, and fry them in a frying pan with plenty of ORGANIC extra virgin olive oil
4.
Set them to drain on a paper towel to remove the excess oil.
