Ingredients

  • 2 corn tortillas
  • 1 onion
  • 3.5 oz red pepper
  • 3.5 oz green pepper
  • 1 clove of garlic
  • A pinch of chili powder (depending on how spicy you like it)
  • 2 tomatoes
  • 9 oz corn
  • 2 tbsp STAR extra-virgin olive oil
  • 2 tsp green chili sauce (optional)

Instructions

  • 1.
    Chop the onion into small cubes and add to a frying pan with the extra-virgin olive oil. Sauté over medium heat, and when it starts to brown, add the chopped peppers and corn. 
  • 2.
    Once all the vegetables are golden brown, add the garlic, chili powder and grated tomatoes
  • 3.
    Add salt and pepper and cook for 10 minutes over medium heat. 
  • 4.
    Transfer the vegetables into a bowl and set aside.
  • 5.
    Wipe out the frying pan with a paper towel so that you can begin to assemble the tortillas
  • 6.
    Add a tortilla to the pan and let it warm for a minute. Then add the filling and fold up the burrito tightly.
  • 7.
    Cook the burrito until both sides are nicely toasted. Top with the green chili sauce.
