Cook the penne according to the instructions. Meanwhile, soak the textured soy protein in water for about 15 minutes, together with the paprika. Strain and set aside.

In a deep pan, brown the chopped onion and garlic in the
extra virgin olive oil over medium heat. Add the chopped carrot.

Add the well-drained soy, the walnuts, the wine, the oregano, and the salt and pepper. Finally, add the tomato, cover and cook over medium-low heat for 20 minutes.

Add the pasta to the pan, stir and serve.
