There will never be anything better that Mom's chicken soup. Confort and deliciousness at it's highest form.
Ingredients
1 whole chicken (approximately 1.5 kg)
2 carrots, sliced
2 stalks of celery
1 leek
2 bay leaves
200 g vermicelli noodles
2 tablespoons STAR extra virgin olive oil
Salt and pepper to taste
1.5 liters mineral water
Instructions

Place the chicken, carrots, celery, leek and bay leaf in a large pot. Add water to cover.

Add salt and pepper to taste and bring the water to a boil. Reduce the heat and simmer for 1 hour.

Strain out the vegetables and chicken, pour the broth back into the pot and add the extra virgin olive oil. Stir in well to mix with the broth, to make it mellow and flavorful.

Add the noodles to the pot and cook according to the manufacturer’s instructions. Before serving, try adding some shredded chicken and, if you like, a handful of cooked chickpeas. Serve piping hot.
