Gently fry the vegetables, starting with the onion, in a pan with a little extra-virgin olive oil.

When the vegetables are cooked, add a little water and mix them all together in a blender.

Put the lentils in a pan, add the blended vegetables and cover with water. If you like, you can add a ham bone for extra flavor. Cook for about 20 minutes.
