An easy recipe to bring something different to your summer table!
Ingredients
4 fillets desalted cod
150 g flour
50 g cornstarch
1 teaspoon sweet paprika
Salt and pepper to taste
500 ml STAR extra virgin olive oil
For the pistachio sauce
40 g shelled pistachios
1 small clove of garlic
A sprig of fresh parsley
½ lemon
1 tablespoon water
30 ml STAR extra virgin olive oil
Salt and pepper
Instructions

Dry the cod very well with paper towels.

Prepare the sauce by blending the pistachios together with the garlic, parsley, lemon juice and a tablespoon of water until it forms a thick paste. Gradually add the extra virgin olive oil while continuing to blend, until the sauce is creamy. Add salt and pepper to taste and set aside.

Mix the flour, cornstarch, paprika, and a pinch of pepper in a bowl.

Dredge the pieces of cod in the mixture, making sure they are well coated on all sides.

Heat plenty of extra virgin olive oil in a deep frying pan or saucepan, to about 170-175 ºC. Fry the cod in small batches for 4-5 minutes until it is golden brown and crispy on the outside. Remove and set to drain on paper towels or a wire rack.
6.
Serve immediately with the pistachio sauce on top or on the side.
