A hearty and healthy breakfast to keep you energized all day long!
Ingredients
2 large flour tortillas
2 eggs
50 g ham or bacon
4 to 5 STAR organic pitted kalamata olives
50 g grated cheese (cheddar or mozzarella)
1 tablespoon STAR extra virgin olive oil
Salt and pepper
Instructions

Heat the extra virgin olive oil in a pan over medium heat. Beat the eggs with salt and pepper, pour them into the pan, and cook until they are lightly scrambled.

Add the diced ham or bacon and the chopped olives. Mix all the ingredients and season with salt and pepper to taste.

In another pan, lightly heat the tortillas to soften them.

Add some of the egg, ham and olive mixture to each tortilla. Sprinkle with grated cheese.
5.
Roll the tortillas to make the burritos, folding the ends so the filling doesn’t spill out.
6.
Optionally, brown the folded burritos in a pan with a little extra virgin olive oil to crisp them up.
