Brown the onion in a pot with a splash of
extra virgin olive oil and add the diced chicken breast. Once the chicken is browned, season with salt and pepper and set aside.

Add the sliced garlic to the pot along with the green pepper cut into thin strips. Cook for a few minutes. Grate the tomatoes and add them too.

Pour in the chicken broth. When it starts to boil, add the penne and a pinch of salt. Add or remove a little water during the cooking process to ensure the pasta is cooked to your liking.

Once the pasta is cooked, add the chicken. Stir.

Garnish with grated Parmesan and some basil leaves (optional).
