To make the tortillas, mix all the ingredients together in a bowl. Pour some
STAR extra-virgin olive oil onto a flat surface and knead to make a soft, pliable dough. Divide the dough into as many pieces as you want tortillas and roll them out into thin circles.

Pour a little
STAR extra-virgin olive oil into a small frying pan. When it is really hot, add a raw rolled-out tortilla and cook on both sides. Repeat as many times as necessary.

Beat the eggs, walnut milk, salt and pepper together in a bowl. Add to the frying pan and cook until the eggs are creamy but firm.

Arrange the filling on the tortillas and enjoy your healthy and highly original breakfast to start the day firing on all cylinders.
* If you have any cheese on hand, you can grate some on top and brown in the oven under the broiler for a minute or two.
