Ingredients
8 small or 4 large heads of bok choy
2 tablespoons of STAR extra virgin olive oil
2 cloves of garlic
1 tablespoon grated fresh ginger
2 tablespoons soy sauce
1 teaspoon rice vinegar
1 teaspoon honey
Instructions

Cut the heads of bok choy in half lengthwise, wash them well, and drain them. Separate the green leaves from the thicker stems.

Heat the extra virgin olive oil in a wok or large frying pan over medium-high heat. Sauté the stems first for 2-3 minutes until they begin to soften.

Then add the green leaves, the finely chopped garlic, and the ginger. Sauté for another 1 to 2 minutes until the leaves are wilted but still retain their color.

Add the soy sauce, rice vinegar, and honey. Mix well so that the bok choy absorbs the flavor.

Remove from the heat and serve as a side dish to accompany meat, eggs, or fish.
