In a pan, brown the onion, leek and garlic, all finely chopped, in the
extra-virgin olive oil. Add the carrot, finely diced, and cook all the vegetables together for a few minutes.

Add the beef, curry powder, salt and pepper and cook for a few more minutes until the beef is lightly browned.

Add water (or vegetable broth) to the pot until the contents are just covered and continue cooking for about 20 or 30 minutes. Serve with white rice, if you like.
