Ingredients
400ml condensed milk
400ml heavy cream
4 egg yolks
2 Sicilian lemon
1 bunch of basil
Sea salt
STAR organic extra virgin olive oil
1 essence of vanilla
Instructions
1.
In a pan, heat the cream, egg yolks and condensed milk and vanilla, without boiling.

When it reaches 170 f• place the pan in a bowl with ice and salt to cool.
3.
With a mixer, beat the lemon juice and basil leaves and strain.
4.
Add the lemon juice and basil to the cold ice cream mixture.
5.
Stir for 10 minutes and rest for 30 minutes in the freezer, repeat this 3 times or until the mixture thickens.
6.
Place 2-3 scoops of vanilla ice cream in a cup or bowl Drizzle a couple glugs of olive oil over the ice cream Sprinkle a pinch of sea salt over the top.
