Preheat the oven to 200 ºC. For an extra touch of flavor, stuff the dates with a toasted almond or a little blue cheese.

Cut the bacon slices in half and wrap one piece around each date. Secure the bacon with a toothpick so it doesn’t come loose.

Set the dates on a baking sheet lined with parchment paper. Sprinkle with a little extra virgin olive oil for added crispiness.

Bake 12–15 minutes, turning them over halfway through, until the bacon is golden brown and crispy. Remove the dates from the oven and let them rest for a couple of minutes before serving.
