Avocado and Parmesan toast
Ingredients
1 ripe avocado
1 medium tomato
A few leaves of arugula
A very thin slice of Parmesan cheese
A handful of crushed almonds
A dash of STAR extra virgin olive oil
Instructions
1.
In a bowl, mash the very ripe avocado with a fork. Add a dash of
STAR extra virgin olive oil
and a pinch of salt.
2.
Place the avocado on a medium sized piece of whole wheat toast.
3.
Top with two slices of tomato, arugula, Parmesan and almonds, and finish with another drizzle of
STAR extra virgin olive oil
on top.
