The Best Gazpacho

Ingredients

19 very ripe tomatoes
1 onion
1 green pepper
1 red bell pepper
1 cucumber
1 clove of garlic
1 cup of white bread (crusts cut off)
Juice from half a lemon
2 teaspoons STAR Sherry Vinegar
½ cup STAR Extra Virgin Olive oil
½ cup cup water
A pinch of salt
Croutons

Directions

Chop the tomatoes, the onion, the green pepper, the red pepper, the cucumber, the garlic and the bread. Add the lemon juice, vinegar, the extra-virgin olive oil and the water (add more or less water depending on how thick you like your gazpacho).
Let the mixture sit in the fridge for at least a couple of hours so that the flavors meld together (it’s best to let it rest overnight if possible).
Add salt to taste, blend the ingredients together until creamy and serve very cold, topped with croutons.

Caramelized Bell Peppers with Balsamic Vinegar

Ingredients

3 red bell peppers
2 tablespoon STAR balsamic vinegar
A pinch of salt
A splash of STAR Extra Virgin Olive Oil

Directions

Preheat the oven to 395 ºF. Set the peppers, whole, in a baking dish with a drizzle of extra-virgin olive oil. Use a brush to coat the tops with a little more oil. Put them in the oven.
Roast for about 30 minutes, flipping them halfway through.
Peel the peppers (try to remove all the blackened skin). Remove the seeds and cut into strips.
In a frying pan with a drizzle of extra virgin olive oil, sauté the peppers over high heat for a few minutes. Add salt to taste.
Add the balsamic vinegar and cook over low heat for a few minutes until the sauce caramelizes.
You can serve these peppers to complement a wide variety of other ingredients. They are fantastic on top of toasted artisan bread with a slice of goat cheese!
