Pasta all’Amatriciana

Ingredients

320 g spaghetti

100 g bacon or guanciale

1 chili
-
A splash of dry white wine

400 g ripe tomatoes

80 g grated pecorino cheese

A splash of STAR extra virgin olive oil
Instructions

Cook the bacon or guanciale (cut into strips) in a deep frying-pan or pot. Add the chili and the wine and simmer for a few minutes.

Add the chopped tomatoes. Cover and cook over medium-low heat for about 15 minutes.

Cook the spaghetti following the instructions on the package. Once it’s ready, add it to the sauce. Keep in mind that the sauce can wait for the pasta to finish cooking, never the other way around.

Add a pinch of black pepper, a splash of extra virgin olive oil and serve the pasta piping hot, topped with grated pecorino cheese.
