Ingredients
200 g white melting chocolate
90 ml whipping cream
1 teaspoon vanilla extract
A pinch of salt
40 g pistachios, shelled and finely chopped
15 ml STAR extra virgin olive oil
Crushed pistachios, shredded coconut, or white chocolate powder for coating
Instructions

Chop the white chocolate and set it in a heat-resistant bowl.

Heat the whipping cream in a saucepan over medium heat until it begins to simmer gently. Take it off the heat and pour it over the white chocolate.

Let it sit for 1 minute and then stir until the mixture is entirely smooth. Add the vanilla extract, the salt, the chopped pistachios, and the extra virgin olive oil and mix well.

Cover the bowl with plastic wrap and refrigerate for 2 hours until the mixture is firm but malleable.

Form small balls using a spoon or slightly moistened hands.

Coat the truffles in crushed pistachios, shredded coconut, or the coating of your choice. Keep them refrigerated until ready to serve.

Before serving, you can drizzle each truffle with a few drops of citrus-infused extra virgin olive oil, vanilla, or a pinch of salt flakes. This will enhance the pistachio flavor and add a little gourmet flair.
