200 ml single cream (or evaporated milk for a lighter version)
50 ml STAR extra virgin olive oil
½ teaspoon nutmeg
Salt and pepper
50 g grated cheese (optional, for au gratin)
Instructions

Heat the extra virgin olive oil in a large skillet over medium heat. Add the chopped onion and garlic and sauté until golden brown.

Add the cod and cook over medium-low heat for 5-7 minutes until it begins to brown.

Add the spinach and cook for 3-4 minutes until it wilts.

Pour in the cream or evaporated milk and add the nutmeg, salt, and pepper. Mix well and simmer for 10 minutes until the sauce thickens and the cod is tender.
5.
Optionally, transfer the mixture to an ovenproof dish, sprinkle with grated cheese and broil at 200 °C until the top is golden brown.
