One of the best chicken recipes, with a delicious sauce. Perfect for family gatherings or get-togethers with friends, or to enjoy on your own!
Ingredients
500 g chicken breast
1 sugar-free natural yogurt
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon paprika
½ lime
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 onion
2 cloves of garlic
1 teaspoon fresh ginger
200 ml crushed tomatoes
100 ml light cream or coconut milk
Fresh cilantro for garnish
Salt and pepper
Basmati rice or naan to accompany
Instructions
1.
In a bowl, mix the yogurt with the garam masala, turmeric, cumin, paprika, salt, pepper, and the lime juice and zest. Add the chicken, sliced into cubes. Mix well and let it marinate for at least an hour in the refrigerator (even better overnight).
2.
Heat a tablespoon of STAR extra virgin olive oil in a frying pan and brown the marinated chicken. Remove and set aside.
3.
In the same pan, add another tablespoon of STAR extra virgin olive oil and add the butter. Cook the chopped onion in it, along with the chopped garlic and grated ginger, until golden brown and fragrant.
4.
Add the crushed tomatoes, cook for a few minutes, and then add the cream or coconut milk. Mix well and add the chicken.
5.
Cook everything together over medium-low heat for 10-15 minutes, until the chicken is tender and the sauce is thickened. Add salt to taste and a final splash of STAR extra virgin olive oil to enhance the flavors.
6.
Serve with basmati rice or naan bread and garnish with fresh cilantro.
