There’s no need to complicate things if you want your children to love simple, tasty vegetable soups.

Here are four recipes you can make starting with a dash of mild, extra-lightolive oil and topped off with some homemade baked croutons. Bon appétit!

Pumpkin, carrot and leek. A classic. If you like, you can swap the pumpkin for sweet potato—just as tasty with a lovely sweet finish.

Courgette, onion and potato. Add a dash of almond drink at the end for a smooth, creamy texture.

Peas with mint and burrata. Pure delight for kids. You can use frozen peas and decorate with a ball of burrata, some mint leaves and a pinch of ground cloves.

Broccoli, spinach and coriander. Think green with this amazing soup that not only tastes great but is also packed with goodness. Finish off with a handful of chopped nuts.
