Vegan Salad

Ingredients
1 zucchini
1 large ripe tomato
2.8 oz STAR Organic kalamata olives pitted
1 medium onion
3.5 oz sweet corn
8 radishes
A few basil leaves
Salt and pepper

For the vinaigrette:
1.7 oz STAR Extra Virgin Olive Oil
0.5 oz STAR vinegar
A pinch of oregano
A pinch of tarragon
Instructions
1.
Slice the zucchini into thin strips, like spaghetti, using a knife or a mandoline.
2.
Add the diced tomato, the
olives
(whole or sliced, as you prefer), the julienned onion, the corn and the sliced radishes. Add a few basil leaves.
3.
To prepare the vinaigrette, mix the
extra-virgin olive oil
, the
vinegar
, the oregano and the tarragon.
4.
Pour the vinaigrette over the salad, season with salt and pepper and stir well to bind the flavors together.
