- 1 lb. large carrots, peeled
- 3 Tbsp. golden raisins
- 2/3-cup mint leaves, cut into ¼ inch wide julienne
- 2 tsp. lemon juice
- 1 Tbsp. STAR Extra Virgin Olive Oil
- Salt and freshly ground black pepper
Grate carrots on the large holes of a box grater into a medium bowl. Add the raisins, mint, lemon juice, and olive oil; season with salt and pepper.
Toss to combine and serve.
