Lights dinners offer a healthy salvation from the avalanche of food coming your way over Christmas and New Year. Since you’re likely to be rushed off your feet at this time of year, here are three light and healthy ideas to get you started.

Crudités with hummus

You can’t go wrong with crudités: crisp, fresh carrot, cucumber, courgette and the like, either on its own or dipped into a vinaigrette or some hummus (so make sure you’ve got some decent extra-virgin olive oil to hand!).

Avocado, tomato and nuts on toast

Rub some tomato onto a piece of toast. Mash the avocado in a bowl and add to the toast. Drizzle with extra-virgin olive oil and finish off with some ground black pepper, salt and chopped walnuts and pine nuts. Looks amazing, tastes even better…

Pear and toasted hazelnut salad

Quick and easy. Put some lettuce on a large plate and then arrange some raspberries, redcurrants, toasted hazelnuts and pieces of pear on top. You can also add some chicken and seeds if you want something more substantial. Make a dressing with extra-virgin olive oil, apple vinegar and salt, drizzle on top and you’re good to go!
